Fettuccine Alfredo for about $3.00 in under 20 minutes

Tonight’s dinner is the first thing Zack ever cooked for me when we started dating, and it definitely helped win me over 🙂  If Zack ever cooked for you…he probably made this. We normally make this with chicken, but we didn’t have any, and I haven’t seen any on sale lately so we used pork.  Turns out pork is just as yummy as chicken!

Ingredients:

  • Fettuccine noodles
  • Spinach (about 1 cup)
  • 1 pork tenderloin (maybe its a 1/2 lb?)
  • 1/2 pack Mushrooms
  • 1/2 Onion
  • Butter
  • Olive Oil
  • 1 Garlic clove
  • Alfredo Sauce (from a jar or homemade)
  • Bread
  • Parmesan cheese

To Make:

  1. Heat a pot of water to boil for noodles.
  2. Add fettuccine noodles and set timer for 11 minutes.
  3. When there is about 6 minutes left on timer add spinach.
  4. Once you have about 5 minutes left on the noodles, heat about two turns around the pan of olive oil with 1/2 tbs butter in skillet
  5. Cook diced onions and pressed garlic in skillet, then about a minute later add mushrooms, then about another minute later add diced pork
  6. Cook until the pork is no longer pink.
  7. When timer has about 2 minutes left, put bread that has been buttered and topped with Parmesan in toaster
  8. When noodles are done, drain and add to skillet.
  9. Pour about 1 cup (or more or less depending on your taste) of the alfredo sauce, and mix well.
  10. Serve with toast.

The cost:

  • Noodles $1.00 a box and we used about 1/2 so 0.50
  • Pork: Don’t remember…I know I wouldn’t have spent more than 2.00 a lb on it, so we’ll say 1.00 for 1/2 lb
  • Spinach: $1.50 for the bag, I think I used 1/4 of the bag so $0.38
  • Mushrooms: $1.59 for pack, so $0.80
  • Alfredo Sauce: not really sure, but I know I wouldn’t have spent more than $1.00 on the jar and I used about 0.33 worth (and I froze the rest…we’ll see if its freezable!)
  • Everything else: too cheap to calculate

The Total: $3.01 in about 20 minutes with enough leftovers for 1 person
