How to get a credit if you lost cable this month in the storms…

Today is the 19th of July and so far this month I have been without cable and internet for 14 of those days (hence the lack of posts on my blog!)  We lost our cable during the June 28th storm and then got it back for a week, and lost it again due to some other problem I never really figured out.  Today I called Comcast to see what kind of a credit I could get and they said they can either give you premium channels for 3 months or a credit for each day you were without cable.  Because I like to get as much for free as possible, I asked for a credit for the first outage and premium channels for the second.  They agreed with no fuss!  I highly recommend you try and save a few $$ by seeing if your cable or internet provider will do the same!

Red White and Blue cupcakes

I made these for the 4th of July.  They are chocolate cupcakes from a box mix ($1.00 at Martins) topped with homemade butter cream frosting (about $2.00).  The white are just plain vanilla butter cream.  The blue are vanilla butter cream with 3 blue berries ($3.00 for the box).  The red I made with a thicker butter cream and mixed in strawberry jam (maybe $1.00?).  Very yummy and it probably cost me only  around $7.00 to make!

Easy Skillet Chicken and Rice Dinner for under $5.00

This dinner took about 50 minutes to make, but most of that time involved me doing nothing.  It also probably cost me under $5.0o total to make. The chicken comes out super moist and the best thing about this recipe all you have to wash is the skillet and a cutting board!!!

Chicken Skillet Dinner (for 2):

Ingredients

  • 2 Chicken Thighs
  • 1 cup brown rice
  • 2 cups chicken stock
  • 1 cup cooked corn
  • 1 cup salsa (I used peach and mango salsa from costco mmmm)
  • 1 small red pepper
  • flour
  • salt and peper
  • olive oil

To Make:

  1. Preheat oven to 350
  2. Coat the chicken with flour and a little salt and pepper.  Place in cast iron skillet with a little olive oil and brown on both sides.  Remove from skillet and set aside
  3. Put brown rice and chopped red pepper into the hot pan and lightly toast.
  4. Add chicken stock to skillet and bring to boil.
  5. Place chicken on top of rice and put in oven for 45 minutes
  6. After 45 minutes, top the chicken and mix corn into rice. (You may need to add a little water to rice if all the stock has been absorbed)
  7. Return to oven for about 5 minutes.  Taste rice to be sure it is cooked- when it is cooked remove skillet from oven and serve.

I just saved $15 a month on my cable bill!!

We watch about 5 channels on our TV, and those 5 channels already cause us to waste way more time than I would like.  This is why when my newest comcast bill showed up, and I saw the prices had increased by $30 something had to be done!  Our previous promotion had ended and now the TV portion was going to cast about $45 a month for our few channels we watch.  I called comcast and spoke to two ladies who told me there was nothing they could do to get me a cheaper price…even when I said I would cancel.  Now, as much as I wish I could cancel TV I really love getting local news, but not for $45!!! They said they couldn’t even downgrade me to a package with less channels.  I thanked the lady for her time, hung up, and decided to figure out how much I could get directTV for (with no real intention of switching because satellite doesn’t work very well at our house)  I found out the price I would pay if I switched and called comcast back.  I told the person on the phone ” I can get Direct TV for $29.99 a month what can you do so I don’t have to switch?”  Immediately he said “I can take $15 off your bill for the next 12 months!!”  It was that easy!!!  Now, this is still a crazy high price to pay so I can watch my local news, but I don’t know another way to have local news. (any ideas??)

So what did I learn today??

1) Call until you get someone who can help you

2) Don’t settle for paying more than you want on your cable/internet bills!!  They always have hidden packages and promotions they can give you.
